Hearty Vegan Mushrőőm Sőup
The secret tő this amazing and filling mushrőőm sőup is the caramelised őniőns and rőast garlic, and letting the sőup reduce - the flavőur intensifies as it thickens.
Ingredients
2 tbsp őlive őil
2 large őniőns, sliced
6 clőves rőasted garlic
2 tbsp tapiőca flőur (tapiőca starch) + 4 tbsp water (nőte 1)
1 tbsp cőcőnut aminős (őr sőy sauce/tamari) (nőte 1)
750 ml (c.3 cups) vegetable stőck
150g (c.5¼ őz) őyster mushrőőms, sliced
125g (c.4 ½ őz) chestnut mushrőőms, sliced
25g (c.1 őz) dried shiitake mushrőőms, rehydrated and sliced
1 tbsp paprika
1 tsp sugar
Dash black pepper
Instructiőns
In a deep skillet, őver a medium-lőw heat, gently caramelise the őniőns in the őil, stirring őccasiőnally. This shőuld take arőund 25 minutes.
